La demande croissante des consommateur-trice-s des produits régionaux offre des opportunités aux petites exploitations ovines en Suisse. C’est pourquoi l’association de moutonnier-ère-s de la région de Lucerne et AGRIDEA ont lancé un projet pour améliorer et mieux valoriser la filière ovine. Le premier pas était de sonder les principaux partenaires. Pour le sondage, les acteurs principaux étaient impliqués depuis le début du projet pour mieux anticiper les besoins du marché local et les acteurs de toute la chaîne de valeur. Les moutonnier-ère-s, les multiplicateur-trice-s du métier et AGRIDEA ont développé un questionnaire pour évaluer les besoins, les contraintes et les potentiels sur les différents niveaux de la filière. Les points principaux de cette enquête étaient : 1) Les avantages perçus de la viande ovine et la volonté de payer un prix plus élevé. 2) Les contraintes pour augmenter le pourcentage de la viande ovine suisse par rapport aux importations. 3) Les critères pour le label dans l’avenir, 4) Développer de nouveaux produits afin de commercialiser tous les morceaux de l’agneau. Les résultats du sondage ont été utilisés pour l’élaboration d’un itinéraire du projet afin de mettre en place un réseau de production qui est capable d’améliorer la situation actuelle. Dans ce processus, tous les acteurs impliqués ont été réunis plusieurs fois et de bonnes relations de confiance ont pu être établies. Tout le projet était initié et accompagné par AGRIDEA et un groupe de pilotage avec quelques acteurs principaux de la branche et du métier. Les deux objectifs principaux sont une amélioration du prix pour le-la producteur-trice et une qualité meilleure pour le consommateur-trice-.

Growing consumer demand for regional products presents opportunities for small sheep farms in Switzerland. Hence the sheep farmers’ association of the region of Lucerne and AGRIDEA have launched a project to improve and add value to the sheep sector. The first step consisted of a study among the main partners. For the survey, the main stakeholders were involved from the beginning of the project to anticipate the needs of the local market and the actors throughout the value chain. Sheep farmers, producers and AGRIDEA designed a questionnaire to evaluate needs, constraints and potentials at different levels of the sector. The main points of the survey were the following: 1) Perceived advantages of sheep meat and willingness to pay a higher price. 2) Constraints to increasing the percentage of Swiss sheep meat in comparison to imports. 3) Criteria for the label in the future. 4) Development of new products so as to market all the lamb cuts. The results of the survey were used to draw up a roadmap of the project in order to build a production network capable of improving the current situation. During this process, all the stakeholders involved met several times thus establishing good relationships of trust. The whole project has been initiated and accompanied by AGRIDEA and a steering group with the main stakeholders of the branch and the profession. The two main objectives set are improvement of the price paid to the producer and better quality of meat for the consumer.
