Dioxins. Effect on human nutrition

Chemical structure of dioxins and furans and its sources and origin are explained. The toxic compounds of this group and the Toxic Equivalent Factor (TEF) concept is introduced. The Tolerated Daily Intake (TDI) and results from the EU are given. The recent episodes of foodstuff contamination and the European Directives which will limit the dioxin contents are also discussed.
