Fishy business in the Mediterranean - Tuna, tonnara and testosterone

New methods based on molecular biology techniques have been used for sex determination and sexual maturity staging in Thunnus thynnus, the Bluefin Tuna (BFT). These are based on the determination of steroid hormone concentrations and their ratios and the presence of vitellogenin in plasma and muscle. Sampling techniques for muscle are discussed and the use of such techniques for sex determination in both BFT and swordfish.
