L’hétérogénéité biologique des agneaux : Une contrainte à gérer ou un atout à valoriser ?

Les systèmes d’élevage ovins allaitants mobilisent des processus techniques complexes, dont la maîtrise reste délicate, ce qui induit une certaine hétérogénéité des agneaux vendus. L’objectif de cette étude, menée sur 8 cas d’élevage du Languedoc-Roussillon, est de comprendre comment les éleveurs gèrent et valorisent cette hétérogénéité par leurs pratiques de conduite du troupeau et par la commercialisation. Dans un premier temps, l’hétérogénéité biologique des différentes cohortes d’agneaux est qualifiée et sa gestion par différents leviers est décrite. Dans un deuxième temps, l’analyse montre comment cette hétérogénéité à la fois élaborée et subie, permet d’investir différents débouchés. Enfin, cette gestion de l’hétérogénéité, en lien avec le mode de mise en marché mobilisé par l’éleveur, constitue une source de flexibilité pour saisir des opportunités de marché ou gérer des risques de production.

The ovine livestock farming systems mobilize technical processes which are quite elaborated and very hard to control. This leads certain heterogeneity in marketed lambs. This study tries to understand how farmers manage and value this heterogeneity by their practices and by the mode of marketing. It has been led on 8 cases of livestock farming systems in Languedoc-Roussillon. In a first step, the biological heterogeneity of cohorts of lambs is qualified and its management by different levers is described. In a second step, the analysis shows how this heterogeneity, both elaborated and suffered, allows to invest different marketing chains. This management of the heterogeneity, in link with the mode of marketing, is a source of flexibility, mobilized by the farmer to seize opportunities and manage production risks.
